Banana Muffins
Oven 180C 15-20 mins
Ingredients
100g Butter
50g Brown Sugar
2 Large Eggs
2tbsp Milk
3 Banana's
225g Plain Flour
1tsp Baking Powder
Method
Put cases on to a muffin tray. Cream the sugar and the butter together. Add the eggs one at a time until fully incorporated. Mash the banana's, add them to the mixture along with the milk. Mix the flour and the baking powder together. Add the dry ingredients to the wet. Once mixed, spoon into the cases. Then bake for approx 20mins or until golden brown and a cocktail stick comes out clean.
These can be frozen, and taken out a couple of hours before needed as they thaw nicely and are still yummy.
